Sheffield Hallam University has a state of the art Food Development Facility, where Food Companies can develop high quality products and maximise their Shelf Life without the need for artificial preservatives.

We have supplied a Single Basket Pilot Retort for extended Shelf Life development in Chilled or Ambient Format.

Included in the system we supplied a Self Contained Electric Cooking Vessel to par cook product prior to Retorting plus an Electric Self Contained Steam Boiler to supply steam to the Retort.

Designed for the Pasteurisation or Sterilisation of a variety of food products.

With the food industry moving, more and more towards Ambient / Chilled extended shelf-life products, our Retort Systems will provide an excellent return on investment.

Retort Processing combined with the correct type of packaging (Stand Up Pouches, Jars, PET Trays etc.) can give products such as: Sauces, Soups, Pastes, Prepared Foods, Rice, Pasta and many other food products an Additional Shelf Life of between 14 days and one year depending on the degree of thermal treatment used.

For companies looking to greatly extend the shelf life of their products, Single or Two Basket Retorts are the ideal start up units for smaller scale production.

Cook Tank (Pasteurisation)

Standard Size Range: 200 Litres To 800 Litres
(larger sizes up 3000 Litres available).

Service Options: Gas, Electric, Low Pressure Steam (0.5 Bar) or
High Pressure Steam (6.0 Bar).

Product Examples (Bagged Product): Many types of food ingredients will benefit from this process such as; Seafood, Meat, Pesto, Scrambled Egg etc. Ideal for Pasteurising large Food Service bags.

This machine can be used with or without it’s product baskets.
Cook Tanks are ideal for cooked meat production.

When the meat product is vacuum packed and gently cooked (Sous-Vide) in the Cook Tank, the product quality and yield is high.

Cook Tanks are energy saving and are generally used with Vacuum Packed product contained in baskets.

The Shelf Life of a pouch or bagged product processed in a Cook Tank, increases because the product is cooked and chilled under controlled conditions, in it’s own environment and is not open to airborne contamination.

Exceptional results are achieved when a marinated cooked meat is required, as the meat is cooked with the liquid contained in the bag and absorbs the marinade to a greater depth. Lamb Shanks bagged in a sauce are ideal for Food Service applications.
